Coming up with some good quick and easy leftover turkey recipes can be quite a challenge. The reality is — you just spent days or weeks planning, preparing, cleaning, cooking and cleaning again for your Thanksgiving Dinner or other Holiday Dinner. There’s no way you want the days after to be filled with more cooking. So, simple turkey recipes are a must!

There are a million recipes out there that will use your Thanksgiving leftovers. Recipes like turkey tetrazzini, turkey noodle soup, and the turkey and stuffing layered casserole. Sometimes though, we get tired of the same old thing. I have nothing against those recipes, but I’m ready for something different.
It’s time for a way to eat leftover turkey that doesn’t make you actually feel like you’re eating leftovers day after day. We all know how important that is when you’re serving kids — or a picky husband.
Plus, you don’t want all that leftover food to go to waste, so I’ve come up with some great ways to put your leftover turkey to use.
These recipes feel nothing like Thanksgiving leftovers so you will have your family begging you to put them on your regular rotation.
And, best of all?
They are Quick and Easy and Tasty. So tasty that the kids might even ask you to put them on your Family Favorites list.
6 Quick and Easy Leftover Turkey Recipes
BBQ Turkey Cranberry Rolls
- 3 Cups Shredded or Chopped Cooked Turkey
- ½ C. BBQ Sauce
- 1 C. Cranberry Sauce
- Pub Rolls, Onion Rolls or Hoagie Rolls
Mix together the BBQ Sauce and Cranberry Sauce, then heat on the stovetop or in the microwave until warm. Stir in the Cooked Turkey and heat again until it’s all nice and hot. Serve on Rolls.
Asian Turkey Wraps
- 2 Cups Chopped Cooked Turkey
- 1 Bag Broccoli or Cabbage Slaw
- 1 Cup Asian Salad Dressing
- 2 Green Onions sliced
- ¼ cup slivered almonds
- Tortillas or Leaf Lettuce
Mix the top 5 ingredients together and divide amongst either tortillas or leaf lettuce. Wrap and serve.
Quick Turkey Enchiladas
- 2 Cups diced Turkey
- 1 Cup Salsa
- 10 Corn Tortillas
- 2 cups shredded cheese
- 1 Can Enchilada Sauce
Mix together Turkey and Salsa. Next, divide amongst Tortillas, roll, and place into a casserole pan. Cover with Enchilada Sauce, sprinkle Cheese on top and bake for 35 minutes at 350 degrees.

Turkey Pesto Pasta
- 1 lb Pasta (preferably bowtie)
- 2 Cups Diced Cooked Turkey
- 1 Cup Pesto
- 1/4 Cup Reserved Pasta Water
Cook pasta according to directions, drain then stir in Pesto, Turkey, and Reserved Hot Pasta Water. Serve.
Turkey Cranberry Brie Grilled Cheese
- 2 Slices Hearty Bread
- 2 T. Cranberry Sauce
- 3 Good slices of Brie
- Slices of Cooked Turkey
- Butter
Spread butter on the outside of 2 slices of Bread. Turn over and layer with Cranberry Sauce, Sliced Turkey, and Brie. Close sandwich and grill until brown on both sides and cheese is melted.
This Panini Press will make your plain old sandwiches into something so fancy and crispy that your family will be begging for you to make them again.
Turkey Nachos
- 1 bag of Tortilla Chips
- 1 Cup diced cooked Turkey
- 1 Can Pinto Beans – drained
- 1 Can Sliced Black Olives
- 2 Cups Shredded Cheese
- Salsa
Spread the chips on a cookie sheet and layer with Turkey, Beans, Olives, and Cheese. Bake at 400 degrees until cheese is melted and gooey, about 10 minutes.
Remember to put the ingredients for these recipes on your grocery list before Thanksgiving so you’ll be prepared for your stress-free weekend meals. You’re not going to want to go grocery shopping on Black Friday, so have them on your meal plan ahead of time and you’ll be ready to go.
