Whether you’re staying at home and passing out candy, heading out trick-or-treating, or going to a party, I hope you have a fantastic time.

We’ll be gathering with friends for a driveway party with a Soup Potluck, Firepit, and pit stop for all the kids. They’ll go out to gather a boatload of candy, and I’ll hunt through their stash for any Almond Joy, Baby Ruth, and Tootsie Rolls.

𝗜𝗻𝘀𝘁𝗮𝗻𝘁 𝗣𝗼𝘁 𝗖𝗼𝗽𝘆𝗰𝗮𝘁 𝗦𝗼𝘂𝘀 𝗩𝗶𝗱𝗲 𝗘𝗴𝗴 𝗕𝗶𝘁𝗲𝘀⁣
These turned out so amazing! They’re so light and tender - like little delicate pillows of egg deliciousness.⁣
⁣You've probably seen these all over Pinterest, thanks to our lovely #starbuckscoffee, but who has the time or money to be heading there on the regular? ⁣
⁣
My mom graciously sent me the silicone egg bites mold this week so I knew it was time to make me some.⁣
⁣
I have this problem, tho, where I just can’t follow a recipe 100%. I have to mess with it. Do you do that or are you a recipe follower?⁣
⁣
After investigating about 20 different recipes, I worked at creating my own and here is the result. You can make them, too.⁣
⁣
6 Eggs⁣
1/2 C. Cottage Cheese⁣
1/2 C. Sour Cream⁣
1/4 C. Heavy Cream⁣
1 t. Salt⁣
6 Shakes Tabasco⁣
1 C. Shredded Cojack Cheese⁣
1/2 C. Bacon Crumbles⁣
2 Oz. Green Chiles⁣
⁣
**Makes enough for 2 Egg Bite Molds⁣
⁣
1. Put eggs, cottage cheese, sour cream, heavy cream, salt, and tabasco in a mixing bowl and blend with an immersion blender. Or, put everything in a blender.⁣
2. Add shredded cheese and blend partially. Leave it a little chunky.⁣
3. Grease the egg molds, then put the bacon crumbles in the bottom of the cups from one mold and green chiles in the bottom of the cups of the other mold, then cover.⁣
4. Fill the cups 3/4 full with the egg mixture.⁣
5. Put 1 cup of water in the bottom of your Instant Pot and set the egg cup molds on a rack in the bottom of the Instant Pot. ⁣
6. Cook on steam setting for 9 minutes.⁣
7. Use natural release for 5 minutes, then vent. ⁣
Remove Egg Bites carefully, watching for steam.

Now that our schedule is so busy with school, sports, and school activities, it’s become even more important that I get our meal plan tied down.⁣
⁣
We’re not eating at the same time each night and sometimes some of the kids even have to eat without any adults at home. ⁣
⁣
I knew if I wanted to keep from eating out and prevent them from eating ramen every night, I had to come up with a different kind of plan.⁣
⁣
So, here’s my new process:⁣
⁣
1.) Write out the evening activities and any necessary details about who’s home.⁣
⁣
2.) Schedule Dinnertime (or when the food needs to be ready to be eaten in shifts).⁣
⁣
3.) Fill in appropriate meals that will fit the schedule and who’s eating.⁣
⁣
4.) Lastly, figure out if there is anything to prep ahead in order to make things easier.⁣
⁣

Found a Starbucks to do a little work at. I’m planning to leave some freezer meals in my daughter’s freezer to help make things a little easier for her when I’m gone. I’m always trying to get my family to eat more vegetables and fruit. I think most of us know how important that is, but it’s difficult. My #1 trick though? Stocking a lot of vegetables. We’ll, I broke my Pantry Challenge today. Made it 30 full days, only spending $100 for free food like produce. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Getting to spend time with my mom is a rare treat. 💜 Soaking in as much as I can with her. We did some thrift shopping with my sister, enjoyed lunch, and a coffee. Now, it’s softball time. 🥎

My kids created this bouquet 💐 as we walked together. Something beautiful to make their mom smile, to brighten her day, to remind her that they’re thinking of her. A simple gift with a precious message. A reminder for me that though they may be teens ... they still have the heart of a child.
