Baked Potatoes are one of our go-to meals for lunch or even a meat-free, fast, frugal dinner. They are just one of those foods that only cost pennies, are delicious, filling, and nutritious.
The problem, though, is that oven-baked potatoes take nearly an hour to make once you consider heating up the oven, then baking for 45-60 minutes, depending on their size.
When I first got my Instant Pot, more than two years ago, baked potatoes were on my list of things to try. After making them in the Instant Pot, I was blown away by how great they were.
