It was going to be a long day of homeschool club, so my friend and I decided that we needed a little wind-down time together with a glass of wine at the end of our day.
To make that happen, we decided to throw together a quick dinner and share our efforts to feed our families.
I was just planning to come home to leftovers and this sounded like a much better idea. The problem was … I didn’t really have much to make a real meal out of. I wanted something fancier than leftovers since we were going to be sharing.
That’s how this soup came to be.

I grabbed some homemade chicken stock from the freezer and a package of chicken breast. Then I pulled a jar of Salsa Verde and a pound of dried white beans from the cupboard. This salsa verde has a wonderful green chili/tomatillo flavor and isn’t too spicy.
It’s a quick and easy way to get tons of flavor into this soup without a bunch of chopping. You get a huge boost of flavor in one little bottle.
It was easy to soak the beans while we were doing school all day and I let the frozen chicken breasts and chicken stock thaw in the sink.
Sometimes I’ll use my pre-cooked shredded chicken breast (see how to make it), instead of fresh. To use pre-cooked chicken, make sure to add it after the beans have cooked so you don’t end up with dried out chicken.

Making Instant Pot Green Chicken Chili
When it was time to throw dinner together, I just put all the ingredients into the Instant Pot (here’s the one I have), set it to go for 15 minutes and sat back to wait for the delicious magic to happen.
It’s so easy to keep these ingredients on hand all the time, then you can make a nearly hands-off amazing meal. It is even great for those times you need to make a meal for a new mom.

Serve it just as it is, or with some of your favorite toppings like cheese, sour cream, lime, cilantro, avocado, or hot sauce.
Our favorite way to eat this green chicken chili is to put some tortilla chips in a bowl and pour the soup right on top. It’s great with chips on the side, too.
Can I make Green Chicken Chili in the Slow Cooker?
Absolutely, just dump everything in your crockpot and cook on High for 4 hours or Low for 6 hours.
Can I Cook Green Chicken Chili on the Stovetop?
You sure can … for the stovetop, dump everything together in a big pot and simmer for about 30 minutes.

Instant Pot Green Chicken Chili Dump Recipe

- 2 Chicken Breasts
- 1 Qt. Chicken Broth
- 1 lb. Dried White Beans (Soaked)
- 16 Oz Jar Green Salsa
- 1 Onion (Chopped)
- 6 Cloves Garlic (Minced)
- 1 tsp. Chili Powder
- 1/2 tsp. Cumin
- 1 Cup Water
Place all ingredients in the Instant Pot.
Pour 1 cup of water in the salsa jar and swirl it around, then pour on top of beans.
Add enough extra water to just come to the top of the contents of the Instant Pot.
Seal the lid and use the Manual setting for 15 minutes.
Natural Release for 10 minutes, then vent.
Open lid, pull out chicken and shred or dice then return to the pot.
Serve with your favorite toppings such as cheese, sour cream, lime, cilantro, avocado, hot sauce, etc.
