Maple Ginger Glazed Carrot Coins

  • 2 lbs. Carrots
  • 2 T. Butter
  • 2 T. Maple Syrup
  • 1 t. Ground Ginger
  • 1 t. Salt


  1. Peel and slice the carrots.

  2. Place them in a saucepan and cover them with water.

  3. Simmer with lid off.

  4. Continue simmering until the water evaporates (approx. 30 min.).

  5. Season to taste.
